Vegetarian Red Thai Noodle Stew

Ingredients
1 tbsp coconut oil
1 small yellow bell pepper
1 small red pepper
2 tomatoes
2 brown onions
1/2 jar red Thai paste
3 clove garlic
1 tbsp fresh grated ginger
1 tin of chickpeas
2 tins coconut milk
1 broccoli head
1 butternut squash
2 tsp maple syrup
Egg noodles
chopped peanuts
To Serve
Directions
Slice onions and fry with 1tbsp coconut oil until golden brown on medium heat for around 5 minutes add salt and pepper
add yellow and red peppers, crushed garlic and grated ginger, fry for a further 5 minutes
stir in 1/2 jar of red Thai paste , then add the coconut milk and remaining vegetables and 2 tbsp maple syrup
simmer on a low to medium heat until the vegetables are soft and the curry sauce has thickened (around 15-20 minutes)
Serving
Boil kettle and cook the noodles according to the packaging
roughly chop up peanuts and sprinkle on top
