Quick, Easy & Healthy Broccoli Soup
OatWell™
Ingredients
1 tbsp olive oil
2 medium brown onions
2 cloves garlic
2 broccoli heads
1 large carrot
1 tbsp flour
1 tbsp plant based butter
300ml skimmed milk
1 low sodium vegetable stock pot
250ml boiling water
100g low fat cheddar cheese (optional)
Salt & Pepper seasoning
10g OatWell™ Original Powder (1 scoop)
Serve
Directions
Dice the onions and fry with 1tspb butter until golden brown on medium heat for around 4 minutes add salt and pepper
Add crushed garlic to the onions, lightly fry for a further minute or two
Add the tbsp flour and take off the heat and stir.
Add 300ml milk and vegetable stock
Put back on the heat and add the diced carrot and broccoli florets
add 250ml boiling water
Continue to simmer for further 10 -15 minutes on low heat.
Take off the heat and blend
Optional
Add cheese and salt and pepper to taste. Heat until piping hot.
