100 g desiccated coconut (plus a handful more for decorating)
1 tsp of vanilla extract
2 tbs of maple syrup
2 tsp of baking powder
100 g demerara sugar
30 ml melted coconut oil
1 tsp of ground cinnamon
50 g dark chocolate chips
Handful of coconut flakes to decorate
Begin by preheating the oven to 180c and greasing or lining a loaf tin.
In a large mixing bowl mash the bananas and combine with the coconut milk, dairy free milk, vanilla extract, maple syrup and melted coconut oil.
Now in separate bowl combine the plain flour, Oatwell powder, desiccated coconut, baking powder, demerara sugar and ground cinnamon.
Add the wet ingredients into the dry and combine well before pouring into the loaf tin.
Sprinkle with a handful more of desiccated coconut and the coconut flakes. Cover with foil allowing enough room for the loaf to rise and bake in the oven for approximately 55 minutes or until a toothpick comes out clean.
Allow to cool before carefully removing from the tin and decorating with the coconut snack bites. Slice and enjoy!
